Partnering with them gives us access to microlot and experimentation coffee that are unique and absolutely thrilling in our cup!

This coffee is a Java varietal of Arabica. The origin of this coffee is quite interesting as it originally comes from Ethiopia but became an essential tool to combat coffee rust that was devastating coffee plants on the island of Java in Indonesia from the late 1880s through the 1920s. The revival of the varietal in specialty coffee came initially to Central America before making its way to Brazil (because of FAF!). This particular harvest underwent a 36hr anaerobic fermentation process to enhance the natural fruit and perfume within the seed. The added texture and body from this process provides a robust backbone for the flavors to develop. It’s truly one of the finest coffees we’ve ever had. We roast it light to keep all that dynamic character intact. As with most lighter coffees, we prefer it as a manual pour over but encourage your own brewing experimentation to see what’s best in your cup!

Tasting notes: Jasmine, fruity, light chocolate, sweet, low acidity with a medium body
