This coffee is a Pacamara Arabica varietal grown in Huila, Colombia. Our direct farm relationship in Colombia gives us access to unique microlot coffees like this. This varietal originally came from El Salvador in the 80s after decades of development. It is the result of cross-breeding Pacas and Maragogipe which originates in Brazil.

The farm growing this Pacamara is a multigenerational plot with the younger generations now taking over production and operations. They are committed to the original techniques and methods which are inherently more sustainable. This microlot is fermented naturally which takes more time and labor than a washed process. The result is one of the most interesting and satisfying coffees we’ve ever experienced. The big hit of vanilla comes through across every brew method but seems to be best balanced with a manual pour over. We roast this to a medium profile which balances the acidity to keep a velvety mouthfeel and wonderful flavor profile.

Tasting notes: Vanilla, honeydew melon, floral aroma, toffee sweetness on the finish.

Hipster tasting notes: Awash in vanilla steam emanating from a moonlit bouquet of tropical pedals, a melon shows off newly acquired juggling skills en route to an interpretive dance that will leave you wondering when your grandmother could’ve possibly slipped that Werther’s Original in your pocket.
