This coffee is a Papayo Bourbon Arabica varietal grown in Huila, Colombia. It has a similar genetic lineage to the Colombia Pink Bourbon but is distinct due to a mutation which gives an elongated cherry (common term for the fruit of the coffee plant encasing the seed/bean). The shape is similar to a Papaya hence the name. This varietal is often used in competition-level coffee and is one of the most unique coffees we’ve sourced to date!
This microlot is fermented in the honey process which is a hybrid fermentation between natural and washed. The result is a coffee with a flavor profile that combines both familiar and unique flavors together. It holds up well across many brew methods but we really like it as a manual pour over. We roast this to a light/medium profile to accentuate all the subtle as well as overt flavor bursting from this special coffee.
Tasting notes: Red apple, floral, clove, subtle vanilla, light caramel sweetness with a medium body and silky mouthfeel.
Hipster tasting notes: A fragile arrow propelled from a focus of sound waves pierces the crisp apple rest upon the head of an enemy unknown. The fate of revelations in conscious action do not determine the level of spice your elder relatives leverage for the family gathering. They do, however, form a molecular superstructure that resists disintegration upon aquatic induction. The resistance rests as it oscillates at a slowing pace. A moon glimmers as the surface drips.
