Working directly with a small farm group in Colombia, we’ve been able to source two microlots from the June ‘25 harvest and are thrilled to bring them to you.
This coffee is a Pink Bourbon Arabica varietal grown in Huila, Colombia. It’s origin traces its roots to this region in Colombia as well and is notable for the pink hue of the cherry husk. There is some debate on details of the varietal’s providence as there are genetic similarities to heirloom Ethiopian coffees vs the Yemeni origins of other bourbon variants.
The farm growing this pink bourbon is a multigenerational plot with the younger generations now taking over production and operations. They are committed to the original techniques and methods which are inherently more sustainable. This microlot is fermented in the honey process which is a hybrid fermentation between natural and washed. The result is a coffee with a unique and interesting flavor profiles unlike any we’ve ever experienced. It holds up well across many brew methods but we really like it as a manual pour over. We roast this to a medium profile to enhance the spice nuances and keep a medium mouthfeel.

Hipster tasting notes: Wisdom, sat under a plum tree with a fresh pot of Ceylon intent on finalizing a screenplay. The screenplay; children, off school, on a sugar rush, torment a spice market with a game melding tag and four-dimensional red rover. The closelining eventually highlights a robust trailer. The aromized spice lingers long after the children retire to slumber.
