This coffee comes from Harrar, the capital of the Harrari region in Ethiopia. It’s grown at 1500 - 2000M (4921’ - 6561’) above sea level. This elevation combined with a natural fermentation process post-harvest accentuate the berry fruit flavors. These fruit flavors are most intense within the first four days off roast before giving way to a more mellow balance. We roast this to a light roast profile to keep the fruit flavors lively and not overcooked.
