This is a Geisha varietal of the Arabica bean grown in San Marcos Guatemala and fermented using the honey process (a hybrid process between washed and natural). Geisha is an Ethiopian Arabica sub-varietal that grows slowly and has lower yield than most Arabica varietals. There are a number of producers of this varietal throughout the world and some of the best come from Central America. It’s known for unique fruit characteristics and balanced acidity that is sought after by many coffee enthusiasts. High demand combined with low yield increase both the rarity and cost of this coffee on the global market. We roast this to a light roast profile to retain the delicate nature of the flavors and balance.
